Spaghetti Squash Lasagna – it is a “fake” lasagna, since there are no noodles. It is gluten-free and much lower in carbs then a regular lasagna, but still hearty and delicious!

Ingredients:
- 1 spaghetti squash
- 2 Tablespoons olive oil
- 1 large white onion, chopped
- 2 cloves of garlic, minced
- 1.5 lbs. sausage (turkey or pork)
- 1 28-oz. can crushed tomatoes in tomato puree
- 1 6-oz can tomato paste
- 1/4 cup chopped flat leaf parsely
- 1/2 cup chopped basil
- salt and pepper
- 15-oz. ricotta cheese
- 4 oz. creamy goat cheese
- 1 cup grated parmesan, plus 1/4 cup for topping
- 1 egg, beaten
- 1 lb. thinly sliced mozzarella cheese
