This is a hearty robust stew that I’ve been making for years. It’s one of those recipes I go to when I’m looking for something warm and comfy for dinner on those cold nights. Served over polenta with some crunchy bread…yummm!

Ingredients:
- Stew Beef, a couple of pounds
- Diced Tomatoes, on large can
- Tomato Paste, a tablespoon or two
- Red Wine, one cup
- Beef Stock or Bouillon, two cups
- Onions, 2
- Garlic, 6 or 7 cloves
- Carrots, 6
- Red Bell Pepper
- Italian Parsley
- Rosemary
- Salt/Pepper
- Olive Oil
- Corn Meal, 2 cups
- Butter, 2 tablespoons
- Parmesan, one cup freshly grated
