Funfetti Cake

I love to bake, and cakes are a favourite in our home. Often though, I find myself sawing off the ‘lumpy’ top of the cake to get a nice, flat surface to put the icing on. Well, no longer! I’ve just discovered the trick to solve this problem ‘in pan’. No more ‘sawing’, wasting of cake, or frustration at icing that just won’t stay on top.

Ingredients:

  • 2 1/4 cups cake flour
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups buttermilk
  • 4 egg whites
  • 1 1/2 cups sugar
  • 2 teaspoons lemon zest
  • 1 stick butter, room temperature
  • 1 teaspoon lemon extract
  • 3/4 cup rainbow sprinkles
