Loaded potato skins


3 each Baking Potatos
2 Tbls Butter, melted
4 each Bacon Strips
1 Cup Shredded Cheddar Cheese
1/2 Cup Sour Cream
1 each Green onion, for garnish
Salt; Pepper to taste

Bake off your potatoes. These medium sized potatoes took 1 hours at 400 degrees. Make sure to scrub them real good under running water first to get all the dirt off them. Yuckie.
Cut in half and scoop out the insides with a spoon. Save the insides for something else like mashed potatoes or potato cakes!
Cut them into 4th’s and brush with melted butter and season with salt and pepper to your taste.
Cut the bacon into 1/2 strips and fry until crispy.
Place the skins in an oven safe dish and top with the cheese. Bake at 350 degrees for about 3-5 minutes until the cheese is just melted. Top with the sour cream then the bacon. Add the green onions finely sliced for garnish if you prefer![/expand]
