These are a really nice way to step up your sandwich at lunch time. An interesting combination of ingredients and the way they’re cooked makes these sandwiches out of this world. Seriously, once I made one I wanted it for lunch every day for a week! These taste best right out of the pan so they don’t travel well but they’re perfect for a weekend lunch at home and perfect to serve at a brunch!

Cut a loaf of crusty white bread into slices. Brush one side of each bread slice with extra virgin olive oil. Spread whole grain dijon mustard on other side. Layer some goat cheese on top of the mustard, and top with thick slices of thick ham, then very thin slices of pears then more goat cheese. Sandwich with remaining bread slice, mustard side down. Heat a cast iron skillet over medium heat. Place sandwich in skillet and weight it down with another skillet. Reduce heat to medium-low and cook sandwiches, pressing down firmly with skillet, until bread is golden and cheese is melted, 3 to 4 minutes per side, flipping once. Serve Warm.
