Chicken in peanut sauce

Chicken in Peanut Sauce over Jasmine Rice. Now that I’ve made it, here are my notes – skip the brown sugar (PB is sweet enough on its own, even “natural” PB), double the chicken, double the Sriracha, use light coconut milk. Also, do NOT cook the sauce as long as stated. Starts to separate when cooked more than a few mins.



  • 2 cloves garlic
  • 2 inches fresh ginger
  • 1 Tbsp vegetable oil
  • 1 lb. chicken breast*
  • 1 (14 oz.) can coconut milk
  • ½ cup natural peanut butter
  • 1 Tbsp soy sauce
  • 1 Tbsp brown sugar
  • ½ teaspoon sriracha hot sauce (optional)
  • 1 medium lime
  • ¼ bunch cilantro (optional)
  • 4 cups cooked jasmine rice
